I am back again into the world of recipes with my recipe for biryani.
Yes you heard it right Biryaniiii. Many crave for delicious biryani, this post is for all Biryani gurus.
So lets start with the recipe.
Ingredients:
Mutton: 1 KG (leg piece, medium cut)
Rice: 1.5 KG (Soaked in water at least for 15 mins)( you can use basmati rice, but I prefer normal rice)
Onion: 250 gms (Thinly sliced)
Tomato: 500 gms (roughly chopped)
Mint Leaves: Half bunch
Coriander leaves: 1/4 bunch
Chillies: 10 Nos (Slit lengthwise)
Lemon Juice from 1 lemon
Curd: 250 ML
Green cardamom: 6 Nos
Cinnamon sticks: 2 Nos
Cloves: 6 Nos
Ginger Garlic paste: 100 gms
Oil: 250 ML
Chilli powder: 1 tsp
Coriander powder: 1/2 tsp
kasuri methi: About 50 gms
Salt as per taste
Method:
Heat a heavy bottom vessel add oil, put add whole garam masala (Cardamom, Cinnamon, Cloves) after a minute add onions, mint leaves & chillies, let onion turn slight golden (just more than pale pink), add ginger garlic paste, after a minute ad mutton pieces & salt required only for mutton, let this mixture cook for 3 minutes on high flame or untill the oil seperates, now you can add chilli powder, coriander powder, kasuri methi and let this cook for a minute, now add chopped tomato & lemon juice, this should cook for 5 mins now you can add curd & cook untill oil seperates. cover & cook till mutton is 70% done, with this cook, oil should have come to surface on top.
In an another bowl (do this when you leave mutton gravy for cooking) boil 2.5 ltrs of water add food orange colour & salt, when water is boiling hot, reduce the flame & add soaked rice, let this cook till 3/4th done, drain any excess water.
Now comes the climax,
you can take a seperate bowl & arrange mutton masala & rice layer wise else add the mutton masala to cooked rice, mix well & cook for 5 mins on low flame.
Here completes your yummy biryani. this goes well with curd raita & kheer (recipes will follow).
